2 2&1/2lb (1.25kg) Beef Roasts,lean or fat trimmed
2 center-cut Ham slices (fat & bone removed), Cubed
1 can Chicken Broth
2 cans diced Tomatoes,drained
2 cans Black Beans, drained
3 cans Kidney Beans, drained
1 large Onion, chopped
1 Green Pepper, chopped
2-3 Celery Sticks, chopped
2 Jalapena Peppers, minced
2 large cloves Garlic, Minced
1 tsp. Oregano
2 tsp. Ground Cumin
3 tbsp. Black Pepper
3 tbsp. Chili Powder
Hot sauce to taste
1lb Monterey Jack Cheese, shredded
Juice of 1 Lime (or 2 tsp. concentrated)
Method:
The night before serving, place the roasts in a Large Crockpot. Add just enough water to cover and cook on low overnight.
Shred the beef the next AM.
Return it to the pot with the Ham and Chicken Broth and mix well.Turn the crock to high.
Add all of the ingredients as ready(except for the Cheese and Lime).
After all are in add the Hot Sauce to your taste.
Add water as needed(or 1 more can of chicken broth).
Taste, Taste, Taste! More garlic, oregano, and jalapelos can be added.
Simmer until tender. The last 5 minutes before serving, add the cheese and lime juice, mix well and serve.

You will certainly need a large crock pot for this recipe - a meal for a crowd.

6 Cans of pinto beans with juice
4 cans dices tomatos
1 large can tomato sauce add through the day
1 pound (500g)ground beef cooked with onions salt,pepper and garlic salt
2 packets Lowerys chili seasoning
2 cup water add through the day
2 cups of hunts catsup add the last hour
Cook for about 8 hours on low.
Everyone always loves a good Chili and homemade is always best.If you can't get these brands just use your own favorites.

I can't do dairy or gluten, so I substituted almond milk for the milk, Smart Balance for the butter, and gluten free flour mix for the flour.
I even made a batch for our church potluck this past Sunday and labeled it as gluten free & dairy free, but that didn't stop people from eating it. It all got eaten.

Your coconut rice pudding recipe is well adapted for the crock pot, however I just wanted to let you know that if you use 1/3 cinnamon water and 2/3 regular water, add a dash of nutmeg, and about 3/4 cup of raisins.. then what you have is Arroz Con Leche! a traditional cuban/puerto rican style dessert that is good warm, but even better chilled!

Hi LisaI am very new to slow cooking having purchased my first slow cooker only a few weeks ago.
Thank you for a wonderful website full of lovely recipes. I tried the bread & butter crock pot pudding recipe yesterday and after putting the slow cooker on low we went out for about 4 hours. When we came home, the pudding looked rather dark around the edges, and thought it may have burned, but we were wrong.
It was the most moist, delicious bread & butter pudding we have ever eaten! We will definitely make this again. I have read that the newer slow cookers take less time to cook than the older ones, so perhaps we will keep an eye on it and adjust the times for our cooker.

Yes, some of the newer models do run hotter and you may need to adjust the cooking times down accordingly. Just continue using it and you will soon get to know how yours works!

Hi Teresa I don't suggest that you use any mac and cheese recipe that is designed for the oven and then use in the crock pot. I have not seen this question talked about on the internet. If I want to "speed up" the cooking and reduce the cooking time can I raise the heat from low to high during the cooking time? If so what should be the corresponding rule of thumb change in heating times? Can I do the reverse?

Generally when going from 'low' to 'high' cooking temperatures you will reduce the cooking time by half and vice verse. So if the recipe says 8 hours on low then 4 hours on high is the rule of thumb.
Most recipes will work equally well on either high or low but occasionally a recipe will only work at one setting and the recipe should state this.

Beef Stew with Dumplings and using beer.
This was delicious. Serve with rice or cous cous.
Next time I make it, I would make double the dumpling mix. The dumplings were so delicious, that we all thought a few more would be good.
This is a definitely tasty and worth your time.
Different types of beer will give a different flavour. Not being a beer drinker, I went to the bottle shop and asked for there cheapest :-)

I noted in your beef beer stew recipe you don't specify a particular brand of beer. I have been cooking beef in beer in my crock pot for over 8 years now and have tried nearly one hundred different beers and ales to try ad find the best.My top 3 are 3rd guiness, 2nd Mathers Black beer and 1st by a mile THEAKSTONS OLD PECULIAR, which is not too sweet and gives a fantasticly rich flavour unlike any other I have tried.
Also I have added a dimmer to the supply of my slow cooker so I can cook for longer. Beef stews I usually cook for 24 to 30 hours! This results in the beef being incredably tender even if the cheapest cut of meat was used as any fat and grisle just dissolve a keep the meat moist. A nice joint to cook this way is rolled brisket.
AP has also sent me an email with a warning that too strong a beer will taste bitter after the long cooking time.
Hey guys, thanks for your website. I tried Beer Beef Stew with Dumplings with somewhat disastrous results. The stew smelled nice, but came out bitter. Searching the web, revealed I am not the only one with such an issue. Seemed that the "key" to selecting a beer is choosing, in-fact, the cheapest most watered down beer out there. So the fact that you are not a beer drinker worked in your favor. Beer with a lot of hops apparently makes the stew bitter to the point where people add prunes to sweeten down the taste.Also, this is the second time that I try the dumpling recipe and they seem to sink into the gravy and do not come out very impressive. I have just started cooking using the crock pot so perhaps I need some more practice.
I have been desperately looking for an easy beef stew recipe for Sunday, and I love your slow cooker recipe.

Enough Sweet Potatoes (orange flesh); Potatoes; Butternut Squash (Butternut Pumpkin) cut into inch pieces to ½ to ¾ fill your crock.
1 inch of fresh ginger grated (can use stuff in jar but fresh is always best)
1 tablespoon soy sauce
2 tablespoons water
1 or 2 garlic cloves crushed (1 for a small crock, 2 for a large)
1/3 cup maple syrup (real stuff not imitation)
1 tablespoon brown sugar
Pepper
Method
1. Put the vegetable in your crock. Make sure they are cut fairly uniformly into 1 inch size pieces to cook evenly.
2. Mix the giner, soy, water and garlic together - pour over and give it all a quick mix. (I did not mix mine and it was still ok but next time I will.)
3. Pour the maple syrup in and then sprinkle the top with with brown sugar.
4. Add a little cracked pepper - or you can omit this and just do this when serving.
5. Cook on High 3 or Low 6 hours - pierce with a skewer or fork to check if cooked.
Notes Use a mix of vegetables that you like - any type of winter squash (pumpkin) should work nicely.
And I think carrots and parsnips would go well too. J
ust use a mix of what you have on hand and 3/4 fill your crock.
I also tend to leave the skin on the potato and sweet potoato - quicker and more nutritious - but please yourself.
